Chicken or Tofu Stir-Fry

• Chicken or Tofu Noodles: Monday Night Meal •
Ingredients:
- 200g chicken breast (or tofu for a vegetarian option), thinly sliced
- 1 tbsp vegetable oil
- 1 red bell pepper, thinly sliced
- 1 carrot, julienned
- 1/2 onion, sliced
- 1/2 cup broccoli florets
- 2 garlic cloves, minced
- 2 tbsp soy sauce
- 1 tbsp oyster sauce (optional)
- 1 tsp sesame oil
- 1/2 tsp ginger, grated
- Cooked rice or noodles, to serve
Method:

Prepare the Ingredients:
- Slice the chicken (or tofu) and vegetables, and have everything ready to go.

Cook the Protein:
- Heat the vegetable oil in a large pan or wok over medium-high heat.
- Add the chicken (or tofu) and stir-fry for 3–4 minutes until cooked through. Remove from the pan and set aside.

Stir-Fry the Vegetables:
- In the same pan, add the garlic and ginger. Stir for 30 seconds until fragrant.
- Add the bell pepper, carrot, onion, and broccoli. Stir-fry for 4–5 minutes until the vegetables are tender but still crisp.

Combine and Flavor:
- Return the cooked chicken (or tofu) to the pan. Add soy sauce, oyster sauce, and sesame oil. Stir everything together and cook for another 2–3 minutes.

Serve:
- Serve the stir-fry over cooked rice or noodles.
