Chicken or Tofu Stir-Fry

Chicken or Tofu Noodles: Monday Night Meal •

Ingredients:

  • 200g chicken breast (or tofu for a vegetarian option), thinly sliced
  • 1 tbsp vegetable oil
  • 1 red bell pepper, thinly sliced
  • 1 carrot, julienned
  • 1/2 onion, sliced
  • 1/2 cup broccoli florets
  • 2 garlic cloves, minced
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce (optional)
  • 1 tsp sesame oil
  • 1/2 tsp ginger, grated
  • Cooked rice or noodles, to serve

Method:

  1. Prepare the Ingredients:

    • Slice the chicken (or tofu) and vegetables, and have everything ready to go.
  2. Cook the Protein:

    • Heat the vegetable oil in a large pan or wok over medium-high heat.
    • Add the chicken (or tofu) and stir-fry for 3–4 minutes until cooked through. Remove from the pan and set aside.
  3. Stir-Fry the Vegetables:

    • In the same pan, add the garlic and ginger. Stir for 30 seconds until fragrant.
    • Add the bell pepper, carrot, onion, and broccoli. Stir-fry for 4–5 minutes until the vegetables are tender but still crisp.
  4. Combine and Flavor:

    • Return the cooked chicken (or tofu) to the pan. Add soy sauce, oyster sauce, and sesame oil. Stir everything together and cook for another 2–3 minutes.
  5. Serve:

    • Serve the stir-fry over cooked rice or noodles.
