One Pan Chicken Fajitas

Ingredients:

  • 2 chicken breasts, thinly sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 onion, sliced
  • 1 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp chili powder
  • Salt and pepper, to taste
  • 4 small flour tortillas
  • Lime wedges, for serving
  • Fresh coriander (optional)

Method:

    1. Prepare the Ingredients:

      • Slice the chicken, bell peppers, and onion into thin strips.
    2. Cook the Chicken:

      • Heat olive oil in a large skillet over medium heat.
      • Add the chicken slices, cumin, paprika, garlic powder, chili powder, salt, and pepper. Cook for 5–6 minutes, stirring occasionally, until the chicken is browned and cooked through.
    3. Add the Vegetables:

      • Add the sliced bell peppers and onion to the skillet. Stir everything together and cook for an additional 5 minutes, until the vegetables are tender.
    4. Serve:

      • Warm the tortillas in the pan for 1–2 minutes.
      • Fill each tortilla with the chicken and vegetable mixture.
      • Serve with lime wedges and fresh coriander (optional).
