Tagliatelle & Meatballs

• Meatballs: A comfort food favourite •
Ingredients:
For the Meatballs:
- 500 g minced beef
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 15 g fresh parsley
- 5 g salt
- 2.5 g black pepper
- 2.5 g dried oregano
- 2.5 g dried basil
For the Sauce:
- 1 (800 g) can crushed tomatoes
- 1 (170 g) can tomato paste
- 1 small onion, finely chopped
- 4 cloves garlic, minced
- 15 g fresh basil, chopped
- 15 g fresh parsley, chopped
- 5 g salt
- 2.5 g black pepper
- 2.5 g sugar (optional, to taste)
Method:
Prepare the Meatballs:-
- In a large bowl, combine minced beef, onion, garlic, parsley, salt, pepper, oregano, and basil.
- Mix until well combined but do not overwork the meat to keep the meatballs tender.
- Form the mixture into 2.5-5 cm meatballs.
- Brown the Meatballs (Optional but recommended):
- Heat a bit of oil in a large skillet over medium heat.
- Add the meatballs in batches and brown them on all sides. This step is optional but adds great flavor and helps the meatballs hold together better.

Cook the Sauce:
- In a slow cooker, combine crushed tomatoes, onion, garlic, basil, parsley, salt, pepper, sugar (if using).
- Add the browned meatballs to the sauce in the slow cooker.
- Gently stir to ensure the meatballs are covered with sauce.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the meatballs are cooked through and tender.
- Stir well.
3. Serve:
- Serve the meatballs and sauce over spaghetti (Our favourite is tagliatelle!) , or with crusty bread for a delicious meal.

Garnish with LOTS of Cheddar cheese and fresh basil, if desired.
